Answer: In my opinion its just the right amount of bitter, it is an intense coffee though -

How fresh are the beans? How often do you refresh the supply? How much time does it lay in the warehouse normally?
Answer: I can only speak for the package I received, the beans were moist when I ground them and the taste was so fresh I invited friends over for a “coffee morning” and they agreed the taste was fresh. Your other questions would be better answered by the supplier. In my opinion, regardless of supplier or manufacturer, ALL coffee packages for public sale should have the date, the beans were roasted, on the package. Just like milk has a “best by” date, or any other perishable. I very much dislike stale coffee beans! Nothing worse tasting than stale coffee beans.
